Introducing Ethiopia Dry Processed Dogo Sodu, a dry processed coffee boasting a nicely fruited flavor profile.. This exceptional brew boasts a fruit-forward profile with notes of fruit salad, red raspberry, strawberry, honeydew melon, mango, papaya, baking spice, wrapped in a slight herbaceous background.
The dry fragrance sets the stage with well-centered aromatic fruits and sweetness, featuring wild berry, papaya, and a subtle umami/soy hint. The wet crust reveals intense floral fruit notes like ripe strawberry and apricot, accompanied by a dense sweetness and an attractive spice side reminiscent of whole allspice. Despite being a dry process coffee, the flavors are remarkably fresh and clean, with some of those tea-like accents that recall washed Ethiopian coffee.
Delivered to the Dogo Sodu mill, the coffee plants thrive in high-altitude zones ranging from 1900 to 2200 meters above sea level. The mill, known for both wet and dry process coffees, produces this full natural coffee, dried in whole cherry. With over 200 small farmers registered, most with an average farm size of 2 hectares or less, selective harvesting ensures only ripe cherries are delivered. The coffee undergoes initial floating to remove underripe beans before being moved to raised drying beds for 3 to 4 weeks until reaching around 11% moisture content.
