This Mexico Finca Fatima Natural is a distinctive, fruit-forward coffee from one of Mexico’s most historic coffee-growing regions, Coatepec, Veracruz. The 20-hectare estate has been in the family of Ernesto Perez and his sister Givette Perez Orea for nearly a century, and as third-generation producers, they continue to uphold a legacy of precision, care, and innovation. Situated at 1,200–1,350 meters above sea level, the farm benefits from cool, consistent mountain temperatures and rich volcanic soils, which allow coffee cherries to mature slowly and develop exceptional density, sweetness, and aromatic complexity. Finca Fatima cultivates premium lots of Garnica, Marsellesa, and Typica varieties, carefully managing each stage of production to ensure that the final cup reflects both the farm’s expertise and the unique terroir of Veracruz.
This lot is processed naturally, meaning the coffee cherries are dried whole with the fruit intact. During this slow drying process, the sugars and flavors from the fruit permeate the beans, creating a cup with pronounced fruit-forward notes and layered complexity. The resulting coffee showcases vibrant flavors of strawberry, tropical fruit, and lemon, balanced by subtle cane sugar sweetness, rich dark chocolate undertones, and warm brown spice. The body is heavy, giving the cup a satisfying, rounded texture, while the medium acidity provides brightness and balance.
Finca Fatima is a fully integrated coffee estate, where Ernesto and Givette oversee every step from cultivation and harvesting to processing, roasting, and brewing. This seed-to-cup approach allows for meticulous control over quality and ensures that every agronomic decision is made with the final cup in mind. Beyond coffee, the farm also embraces sustainable practices and biodiversity through honey production, citrus groves, and agrotourism, giving a holistic view of Veracruz’s ecosystem and traditional farming methods. This Natural lot exemplifies the farm’s commitment to excellence, combining technical precision with expressive, terroir-driven flavors that make it a standout example of Mexican specialty coffee.
