Doña Luz's coffee is remarkably sweet and well-balanced.  The aroma is rich and inviting, with hints of pumpkin pie filling, vanilla, honey, and raisin. In the cup, subtle fruit accents emerge—berry, golden plum, and even a touch of berry sherbet, which blends with a creamy sweetness reminiscent of a fruit and cream dessert. A distinct honey-like sweetness balances mild tannic bitterness, creating a layered and satisfying profile.

This coffee comes from Luz Mely Aguilar Sánchez, a dedicated farmer in the village of El Diamante, about five hours from Jaen in the highlands of San Jose de Lourdes. She and her husband, Roger Chilcon, manage three hectares of land, cultivating a mix of Bourbon and Caturra varieties. Luz employs a unique processing method, bagging freshly harvested coffee cherries and sealing them for 24 hours to encourage fermentation before processing. This technique, along with an extended fermentation period of 36 hours, enhances the complexity of the coffee, often leading to a more pronounced fruit character. Once dried, the coffee is stored in parchment and kept covered until transport to maintain freshness. Their farm sits at an elevation of 1,850 to 1,900 meters, contributing to the coffee’s exceptional quality and depth of flavor.
