This unique project features four coffees, showcasing how different decaffeination methods transform the same Colombian coffee.
For the Decaf Project, James Hoffmann divided one special lot of La Virgen into four parts—three were decaffeinated using different methods, and one remains as a regular caffeinated washed coffee.

What’s Included in the Set?
Each set includes four 60g bags for a total of 240g:
- 1 Bag La Virgen (Non-Decaf): A classic, pure, washed coffee that highlights the natural flavors of the Huila region.
- 1 Bag La Virgen – Swiss Water® Decaf: A chemical-free process preserving full flavor while gently removing caffeine.
- 1 Bag La Virgen – Ethyl Acetate Decaf: Decaffeinated using ethyl acetate, resulting in a smooth, flavorful cup.
- 1 Bag La Virgen – Carbonic Natural Decaf: Crafted with the CO2 subcritical method for a rich, complex taste.
About the Coffee
The coffee for this project comes from La Virgen, located in the Huila region of Colombia, specifically Guadalupe. This area, known for its rich coffee heritage, produces exceptional beans grown between 1,200–2,000 meters above sea level.
Hand-harvested by dedicated small-scale farmers, the coffee is processed using the washed method and sun-dried on patios and raised beds. La Virgen’s growers prioritize environmental sustainability, with many achieving Rainforest Alliance Certification and EUDR compliance.
The lot was split into four parts for this project: three decaf and one original washed coffee.
How Are the Coffees Decaffeinated?
Coffein Compagnie - Ethyl Acetate (EA) Decaffeination
- Ethyl acetate (EA), a naturally occurring compound found in fruits and plants, is used to selectively remove caffeine while preserving the coffee's flavor profile.
- The process involves steaming the coffee beans to open their structure, soaking them in an EA solution to extract caffeine, and then steaming them again to remove residual EA.
- EA can be derived from natural sources like sugarcane or synthesized, with the final product containing no detectable traces.
CR3-Kaffeeveredelung M. Hermsen - CO2 Subcritical Decaffeination
- This method uses carbon dioxide under controlled temperature and pressure to remove caffeine while retaining the coffee’s full flavor potential.
- Beans are moistened and placed in a sealed vessel where CO2 acts as a solvent to extract caffeine.
- This organic-certified and environmentally friendly method is particularly effective for preserving coffee's aroma and complex taste.
Swiss Water® Process
- A chemical-free method using water, temperature, and time to decaffeinate coffee.
- It involves creating a Green Coffee Extract (GCE), which contains all soluble compounds of coffee except caffeine.
- Beans are soaked in the GCE, and caffeine is selectively removed through osmosis and diffusion, maintaining the coffee’s original flavor.
Project Timeline
- Pre-Order Deadline: December 4th.
- Shipping: Pre-orders will be roasted and shipped by December 5th. Orders placed after this date will depend on availability.
- Global Tasting Event: December 15th at 3 PM GMT, hosted live by James Hoffmann on YouTube.
