While dry-process coffees are typically associated with intense fruitiness, this unique lot from the Kasama region in Zambia’s Northern Province breaks the mold. Grown on estates near Kasama town at altitudes between 1,300 and 1,500 meters, this coffee consists of large-seeded Catimor hybrids that are meticulously patio and raised-bed sun-dried. Despite the natural processing, the green coffee arrives exceptionally clean, trading loud fruit notes for a well-balanced, bittersweet structure. Zambia's relatively young coffee industry is defined by these organized estates, and this lot highlights a savory, deep complexity that offers a completely different perspective on African natural coffees.

The cup is characterized by its "boomy," heavy-hitting bittersweet profile, anchored by a deep molasses sweetness and dark cocoa intensity. Instead of high-toned acidity, expect a soft brightness reminiscent of muted dried berries, which gives way to an intriguing array of savory accents like dried tarragon, brown spices, and a unique note of saffron in the aroma. The roast tones are sweetly caramelized, mimicking burnt sugar and rich dark chocolate.
