Finca Villa Betulia, nestled in the coffee-rich region of Acevedo, Huila, is a testament to resilience and innovation. A decade ago, the Calderon family faced financial hardship that nearly ended their long-standing tradition of coffee farming. Luis Anibal Calderon revitalized the farm by transitioning into specialty coffee production, beginning with the cultivation of the prized gesha varietal and expanding to other rare varieties. This shift not only saved the family’s livelihood but also led to the creation of an on-farm laboratory to further study and perfect their coffee. For Luis, coffee is more than a livelihood—it’s a cherished tradition and a source of pride.
At Finca Villa Betulia, innovation meets tradition in the double honey fermentation process. The process begins with careful selection of ripe coffee cherries, which are floated and then fermented anaerobically for 50 hours. After this initial fermentation, the cherries are pulped and undergo a second 50-hour fermentation with a specially curated blend of spices, imparting unique flavor characteristics. The coffee is then sun-dried for 10 days to achieve its final profile.
Colombia’s rich coffee history traces back to the late 18th century when Jesuit priests introduced coffee to the country. By the 19th century, coffee had become a cornerstone of Colombia’s economy, with the first exports recorded in 1808. The industry took a major step forward in 1927 with the establishment of the National Federation of Coffee Growers (FNC), an organization dedicated to promoting Colombian coffee and supporting its producers. In 1958, the FNC launched the iconic “Juan Valdez” campaign, solidifying Colombian coffee's reputation for quality on the global stage. The Federation also created a national coffee fund to provide research, technical support, and resources for varietal improvements, further driving the industry’s success.
