This lot comes from the Kayon Mountain farm, owned and operated by the family of Ismael Hassen in the southern Guji zone of Shakiso. The estate spans two sections across the neighboring towns of Taaroo and Sewana, and this particular selection draws from both the Taaroo plots and nearby smallholders. Kayon Mountain manages its own wet and dry milling facilities, allowing full oversight of post-harvest quality — from fermentation to raised-bed drying. Like much of Ethiopia, the farm is planted with heirloom varieties descended from wild forest stock, known for their exceptional floral and tea-like qualities. This lot was fully washed, with cherries depulped and fermented for 24 to 36 hours before being dried under the sun on raised beds; a meticulous process that preserves the coffee’s clarity and aromatic complexity.
