This year's Wush brings more raspberry and blackberry juices to the forefront.  The dry fermentation of 96 hours rather than the previous 120 hour tones down some of the heavy fermentation flavors and florals bringing some more sweet balance to the cup.  If you really enjoyed the intensity of the perfumy florals in the previous lots, there's still much to enjoy here!  The reduction allows for a more approachable cup that reduces some of the intensity that would overwhelm when drinking cup after cup.

Israel Degefa, the dedicated producer behind the Wush Wush, hails from his Bale Mountain farm, nestled in the Nensebo District of Guji. Inheriting the farm from his grandmother, Israel's profound love and passion for coffee shine through.  Cultivated at elevations ranging from 2100 to 2300 meters in the Oromia region, specifically in the town of Anasora and city of Sama, this natural process coffee undergoes a meticulous 96-hour dry fermentation.  As we grind, the air is filled with an intoxicating blend of intense floral and berry aromatics. Upon brewing, the cup delights the senses with raspbery and blackberry notes, tropical fruit hints reminiscent of lychee, and a sweet white grape acidity. What sets this coffee apart is its ability to maintain authentic terroir flavors, avoiding the overpowering influence of boozy dark fruit fermentation. Israel Degefa's dedication to quality and his grandmother's legacy culminate in a standout example of Ethiopian natural coffee.
