High in the Yirgacheffe region of southern Ethiopia, at elevations between 1900 and 2200 meters, the village of Chelchele is known for producing some of the country’s most distinctive coffees. Grown under the shade of native trees like Enset, Albizia, and Acacia, this offering from Azeb Tadesse Coffee Supply comes from smallholder farmers and plantations using organic practices in nutrient-rich, clay-heavy soil.
After harvest, the coffee is processed naturally at the Chelchele Coffee Station. Only the ripest cherries are selected through meticulous hand-sorting, then dried on raised beds in the sun for 12 to 15 days. This traditional method enhances the coffee’s fruit-forward profile while maintaining a clean cup and stable moisture content of 10–12%.
As with all Ethiopian coffees, this lot is graded for both physical integrity and cup quality, falling into the top tier of specialty classifications. Ethiopia produces just a small percentage of the world’s coffee, yet offers an unmatched range of flavors thanks to its heirloom varietals and ancient growing conditions.
