Nestor Orlando Castillo Flores has built Finca Bendición de Dios from a lifelong passion, starting as a farmhand before gradually acquiring the land he now manages in the Montecillos region. Located in the community of Encinal, the farm is a model of agroforestry, where Denis maintains a dense shade canopy to protect his coffee plots and support a stable microclimate against environmental shifts. This commitment to the land does more than produce high-quality coffee; it sustains the local economy by providing vital year-round employment. This microlot features the IHCAFE 90 variety, a hybrid known for its resilience and excellent cup quality when grown at an altitude of 1,500 meters. To highlight the variety's potential, the cherries undergo a traditional natural process, drying in their skins to allow the fruit’s natural sugars to deeply penetrate the seed. This method requires constant attention to detail during the drying phase to ensure the resulting cup is clean and vibrant.
