Working from his smallholder farm in Chelba, producer Asefa cultivates heirloom varieties at soaring elevations between 1,900 and 2,100 meters. The cool mountain air and high altitude result in exceptionally dense, flavorful cherries that reflect the meticulous care applied at every stage of production. Asefa’s approach is defined by consistency—from the initial hand-selection of ripe cherries to a careful 10–12 day drying process on raised beds—ensuring that every lot delivers the bright, transparent quality that the SNNPR region is world-famous for.
