The Nicaragua component provides the blend's deep sweetness and concentration, sourced through the pioneering social enterprise, Gold Mountain Coffee Growers (GMCG). Working with member farms in Matagalpa and Jinotega, GMCG employs a meticulous Carbonic Maceration (CM) Natural process; a technique borrowed from winemaking. Cherries are fermented in sealed tanks with precise pH and Brix monitoring to maximize malic juiciness and emphasize clean fruit flavors over any intense funky notes.
