Sumè is Revel's take on the classic Mocha Java : Sumatra Aceh Tenga x Ethiopia Wush Wush
Sumè brings together two distinct yet complementary coffees: a fruit-forward natural from Ethiopia's Guji zone and a rich, earthy wet-hulled offering from Sumatra’s highlands. Together, they create a complex and balanced cup with layered sweetness, deep body, and lingering character.
On the Ethiopian side, producer Israel Degefa delivers a standout natural process Wush Wush from his Bale Mountain farm in the Nensebo District of Guji. Grown at elevations of 2100–2300 meters and dry-fermented for 96 hours, this lot highlights raspberry and blackberry juice, floral intensity, and tropical lychee notes, finishing with a clean, sweet touch of white grape and butterscotch.
The Sumatran component, grown in the Aceh Tengah region at 1450 meters, brings classic Indonesian depth and grounding to the blend. Sourced from organic Fairtrade-certified producers Wagiman and Yasmin, this wet-hulled coffee offers a heavy body and medium acidity with notes of dark chocolate, clove, pipe tobacco, grape, and lime. The Giling Basah process used here - characteristic of the region - yields a savory richness that anchors the cup and complements the brightness of the Ethiopian counterpart.
Together, these coffees form a true expression of the historic Mocha Java style -a blend of Africa and Indonesia, fruit and earth, elegance and power. Expect a symphony of florals and berries up front, transitioning into deep cocoa, spice, and tobacco, with a long, satisfying finish.
