Description

A well rounded natural Ethiopian lot from Guji's Dambi Uddo station, featuring notes of dried berry fruits, citrus marmalade, and dark chocolate cranberry/cherry.

This dry process lot from Buno Dambi Uddo offers a well-rounded, fruit-forward cup loaded with berry sweetness and a grounding bittersweet foundation. The fragrance opens with inviting fruit and berry aromas alongside delicate, fragrant hints. On the palate, prominent notes of dried berry fruits and tangy citrus marmalade lead the way, complemented by a rich, layered foundation of dark chocolate, cranberry, and cherry.

The coffee undergoes a traditional dry process, also known as natural processing, where cherries are dried intact with the fruit skin and pulp remaining around the seed. As the cherries dry under the sun, the sugars and aromatic compounds from the sweet mucilage penetrate the heirloom seeds, developing the lot's deep sweetness, fruit intensity, and rich bittersweet character before the dried outer fruit is mechanically removed.

Sourced from the Dambi Uddo station in the Shakiso area of Ethiopia's Guji Zone, this lot is managed by station manager Abiyot. Smallholder farming families across the surrounding high-altitude region cultivate native Ethiopian heirloom cultivars in coffee gardens. Delivering their ripe cherries to the centralized Dambi Uddo station allows local growers to pool their harvests and showcase the distinct fruit-forward character of the Guji region.
